Bacon – the most important ingredient??

Hey y’all

The rain is poring down in Aarhus at the moment – it feels like fall. And all I really want to do, is to crawl into bed, with a cup of tea and a good movie or book (and my boyfriend). How ever no time for that, so even tho’ Gossip Girl is running in the background, re-decorating my bedroom is what’s going down 🙂

Yesterday we made burgers, mini-burgers!
With homemade mayo and bacon w. brown sugar, paprika and chili.
So yummi! it’s insane 🙂

So you take a piece of bacon – not the pre-sliced kind, but the kind you slice yourself!
And 3-4 tablespoons of brown sugar, 1 tablespoon of chili flakes and 1 tablespoon of paprika, and pour it over the bacon, that you’ve sliced yourself 🙂

In the oven it goes, at 200 degrees, for 20-25 min 🙂
It’s insanely good! and usable in burger, or as a side for a BBQ-night 🙂 bacon

Pancakes – on the healthy side!

Hey guys! So as you all know, I’ve started to cut down on carbs, and basically that doesn’t really match with pancakes – or does it? It’s not completely carbs free, but it is a healthy alternative to the normal pancake, and it is a bit heavier, so you can’t eat 10 of them !FullSizeRender This batch makes about 20 of them (they can be used the day after too, just put them on a toaster for 30 sec’s ;))
you need:
2 eggs
5 dl milk
0.5 dl oats
3 dl wholemeal flour
1 dl flour
2 teaspoons baking powder
2 tablespoons of olive oil.

You mix the dry ingredients; then add the olive oil, milk and eggs, and mix it all together, so you have a cohesive mass. And then just go about it as usual; a hot pan, and a spoonful or two of the mixture. Don’t forget to grease the pan 🙂

Serve with sirup, peanut butter or what you like 🙂

Chicken alfredo LCHF style! :)

Hey y’all 🙂 So yesterday was my first real day eating by the LCHF (low carb, high fat). LCHF basically means that you cut down on carbs, and try to avoid sugar. However you can eat loads of fish, eggs, meat, greens. So I started my morning with eating an omelet, with bacon, tomatoes etc. and for drinks? a coffee w. cream. I usually drink my coffee pitch-black, but I read on a “guide-line” about the LCHF that adding cream to your coffee, would a good idea! so I tried that 🙂 The guideline is here, sorry that it’s in Danish! https://www.dietdoctor.com/wp-content/uploads/2011/03/LCHF-for-begyndere2.pdf To the chicken alfredo 🙂 You need: Chicken breats – I used 2 1/2, but I’ve made enough for two times lunch. Butter – enough to brown the chicken Broccoli – as much as you want, cut it into smaller pieces. Cream – 1/2 L Parmesan cheese – a couple of handfuls 😉 2 egg yolks Garlic, onions – 2 onions and 1 clove garlic Mushrooms – 2 1/2 handfulls, cut it nicely 🙂 (I used a bit of port-wine too :)) First cut onions and the garlic, into small pieces, and put it on a large saucepan, with a bit of oil, and let it simmer – be careful that it doesn’t brown too much! Add butter, and let it melt and when it starts to bubble, add the chicken breast, nicely cut into moderate pieces. As I wanted to do this for lunch the next days too, I cut it into bite-sized pieces. Then you let the chicken brown, while doing that you can easily cut the mushrooms, because when the chicken has some not a whole lot, but some color, you add the mushrooms, remember that they contains a lot of water. Then you add the broccoli, and let it cook for about 5 min. Then you add the cream, and bring it to a boil, at this point a put in a tablespoon or two of port-wine. When the cream has reduced a bit, then you add two whipped egg yolks and some parmesan cheese. You are almost there 😉 let it simmer for about 5-7 min, or till it’s reduced to your liking!

If you aren’t following the LCHF, you can use pasta instead of broccoli, or you can mix it. BBG & Kayla Itsines

Hey everybody! This is not a food-related post, but a “update”. This Monday I started on the Kayla Itsines fitness program, all my muscles are super sore, but it feels so good! I’ve also cut way back on white bread, pasta, rice and potatoes, and I haven’t felt bloated at all! It’s amazing! Have any of you experience with the LCHF-program?
