Food for the soul: Bacon-corn

Hey lovelies! The other day, a couple of my friends and I, was in this restaurant in Aarhus, Denmark (where I live). It’s called Memphis Roadhouse, and is a BBQ all in American 🙂 And one of the side dishes, was corn, bacon and butter mixed in all together and heated. It was sooooo good!! Okay, maybe not in track with clean eating, but with a bit of good will, it would fall right into the LCHF-lifestyle, right? 😉

INGREDIENTS
  • 4 strips bacon, cut into bite-sized pieces
  • 4 ears corn, cleaned
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon sugar
  • ¾ cup milk
  • 1 tablespoon butter
INSTRUCTIONS
  1. Fry bacon pieces until browned.
  2. Cut corn off of ears into the frying pan.
  3. Scrape milk from corn cob into the frying pan.
  4. Add in all ingredients except butter.
  5. Cook over low to medium heat, stirring often for about 20 minutes.
  6. Add in butter and cook another minute.
  7. Serve warm.
